🔥 Smoked Cajun Chicken with a Gumbo Twist
🪵 Backyard Smoke Meets Bayou Bold
When the smoke rolls low and the spice runs deep, you know something good’s happening in the backyard. This smoked chicken isn’t just kissed by fire—it’s wrapped in the bold, soulful flavor of my signature Gumbo mix. Think Cajun heat, a whisper of bay, and that slow-building savory that makes you want to lick your fingers and go back for seconds.
🧂 The Rub: Gumbo Mix Magic
This rub pulls double duty—bringing that deep Louisiana soul and a punch of flavor that holds up to hours in the smoker. It’s got:
Paprika and cayenne for heat
Bay leaf and thyme for depth
Garlic, onion, and black pepper for balance
A hint of sass, because why not?
You can sub in any Cajun rub, but if you’ve got my Gumbo blend on hand, you’re halfway to greatness.
🔥 Smoking Steps
Prep the bird – Pat dry, rub generously with oil and Gumbo mix.
Set your smoker – 250°F with hickory or pecan wood.
Smoke low and slow – About 3–4 hours until internal temp hits 165°F.
Rest and slice – Let it sit 10–15 minutes before carving.
Optional: Mop with a butter-hot sauce mix halfway through for extra shine and bite.
